Roast Pork Sandwich with Apple Chutney


Ingredients:
1 bun (sliced in half)
2 slices leftover roast pork (warmed if you like)
2 tablespoons apple chutney
2 slices tomato
2 leaves lettuce
1 tablespoon mayonnaise

Directions:

Goat Cheese Mashed Potato Smothered in Coffee Gravy


Goat Cheese Mashed Potatoes

(makes 4 servings)
Printable Recipe

Ingredients:
1 pound potatoes (your favorite)
2 cloves garlic (peeled)
4 ounces goat cheese (room temperature)
1 tablespoon butter (room temperature)
salt and pepper to taste
milk to taste (optional)
1 tablespoon parsley (chopped)
coffee gravy

Directions:
1. Boil the potatoes and garlic until the potatoes are fork tender, about 20-30 minutes.
2. Drain the potatoes and mash.
3. Mix in the goat cheese, butter and season with salt and pepper.
4. Optionally add milk to bring the mashed potatoes to the consistency that you prefer.
5. Mix in the parsley.

Chicken Baked in Green Tomato and Japaleno Jam


 
 
Ingredients:
2 chicken breasts
salt and pepper to taste
1/2 cup green tomato and jalapeno jam
1 tablespoon grainy mustard
1/2 tablespoon dijon mustard

Directions:
1. Season the chicken breasts with salt and pepper and place them in a single layer in the bottom of a baking dish.
2. Mix the jam and mustard's and spread it over the chicken.
3. Bake in a preheated 400F oven until cooked (the juices will run clear and there will be no pink inside, about 30 minutes.

Grean Tea White Chocolate Mascarpone Brownie With Chocolate Ganache


Ingredients:
1 cup unsalted butter
3 ounces white chocolate (chopped)
1 cup granulated sugar
1 tablespoon matcha (green tea powder)
1/2 cup mascarpone cheese (softened)
3 large eggs (room temperature)
2 teaspoons vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon salt

Directions:
1. Melt the butter and chocolate in a double boiler.
2. Mix in the sugar and matcha.
3. Beat in the mascarpone, eggs and vanilla.
4. Fold in the flour and salt.
5. Pour the batter into a greased 8x8 inch baking pan.
6. Bake in a preheated 325F oven until a toothpick poked into the middle comes out clean, about 55-60 minutes.

Chocolate Ganache


Ingredients:
6 tablespoons heavy cream
3 tablespoons unsalted butter
6 ounces dark chocolate (chopped)

Directions:
1. Heat the cream and butter in a small sauce pan until just before it boils.
2. Pour the cream and butter over the chocolate in a bowl.
3. Stir until smooth.

Pour the ganache over the brownies and wait until it is firm before cutting.

Turkey Salad Sandwich


Ingredients:
1 cup cooked turkey (shredded)
1/2 apple (cored and diced)
1 stalk celery (chopped)
1 green onion (chopped, or red)
1 tablespoon pecans (toasted and coarsely chopped)
1 tablespoon dried cranberries
2 tablespoons mayonnaise
1 splash lemon juice
2 leaves sage (chopped)
salt and pepper to taste
2 leaves lettuce
2 slices bread

Directions:
1. Mix everything but the lettuce and bread in a bowl.
2. Assemble sandwich.

Sweet Potato Pecan Pie


Ingredients:
1 pie crust
2 cups sweet potato (roasted, scooped and mashed)
2 eggs (lightly beaten)
1/2 cup brown sugar
1/4 cup maple syrup (or golden syrup)
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
2 tablespoons bourbon (optional)
1 1/2 cups pecan halves
1/2 cup brown sugar
1/2 cup maple syrup (or golden syrup)
2 eggs (lightly beaten)
2 tablespoons butter
1 teaspoon vanilla
1 tablespoon bourbon (optional)

Directions:
1. Place the pie crust into a pie plate.
2. Mix the sweet potatoes, eggs, sugar, maple syrup, vanilla, cinnamon, ginger, nutmeg and bourbon in a large bowl and pour it into the pie crust.
3. Place the pecans on top of the sweet potato filling.
4. Mix the sugar, maple syrup, eggs, butter, vanilla and bourbon and pour it on top of the pecans.
5. Bake in a preheated 375F oven until the pastry id golden brown and the pecan layer is set, about 40-60 minutes.

Bake Brie and Cranberry Sauce




Ingredients:
1 sheet puff pastry (thawed)
1 cup cranberry sauce
1 round of brie

Directions:
1. Lay the puff pastry out flat and place the brie onto it.
2. Spread the cranberry sauce over the on the brie.
3. Fold the pastry over the top of the brie.
4. Bake in a preheated 350F oven for 25 minutes.

Greek Style Nachos



Love nachos? Try this for a healthy alternative!


Greek Style Nachos

(makes 4 servings)


Ingredients:
4 whole wheat pitas (cut into wedges and toasted)
1 pound Greek seasoned ground lamb (see below)
1 cup tzatziki
4 ounces feta (crumbled)
1/2 cup cucumber (sliced)
1/2 cup tomato (sliced)
1/4 cup kalamata olives (pitted and sliced)
1/4 cup mint (chopped)

Directions:
1. Assemble nachos.

Greek Seasoned Ground Lamb


Ingredients:
1 onion (chopped)
4 cloves garlic (chopped)
1 lemon (juice and zest)
2 tablespoons yogurt
1/4 cup olive oil
1 teaspoon oregano
salt and pepper to taste
1 pound ground lamb

Directions:
1. Mix the onion, garlic, lemon juice, lemon zest, yogurt, olive oil, oregano, salt and pepper.
2. Marinate the lamb in half of the mixture for 30 minutes.
3. Brown the lamb in a pan over medium heat.
4. Drain the grease.
5. Mix in the remaining marinade and cook for a few minutes.

Eggplant and Mozzarella Panini

Planning for a weekend get away? say a nice picnic maybe? then why not pack a really tasty sandwich, panini that is.




Eggplant and Mozzarella Panini

(makes 4 sandwiches)


Ingredients:
* olive oil
1 eggplant (cut into 1/4 inch slices)
1 cup marinara sauce
8 slices bread
8 slices of mozzarella

Directions:
1. Saute the eggplant in oil in a pan in batches.
2. Spread the marinara sauce over one side of each slice of bread.
3. Place a slice of mozzarella on each slice of bread.
4. Place the eggplant on half of the slices of bread and top with the other half.
5. Lightly brush the bread with olive oil and grill until golden brown and the cheese has melted.

Okonomiyaki (Japanese Pancake)


Tired of the same old classic American pancakes? Why not go for Japanese? This easy to prepare this looks as good as it taste!




Okonomiyaki

(makes 14 serving pancake)


Ingredients:
1 cup flour (I used whole wheat flour)
3/4 cup dashi (or water)
1 egg
1/4 of a cabbage (shredded)
1 carrot (grated)
1 zucchini (grated)
1 green onion (chopped)
3 slices bacon
okonomiyaki sauce (or Worcestershire sauce)
mayonnaise
green onion (chopped)

Directions:
1. Mix the flour, dashi, egg, cabbage, carrot and zucchini in a large bowl.
2. Heat some oil in pan.
3. Pour in mixture and top with the bacon slices.
4. Cook on medium heat until golden brown on both sides, about 5-15 minutes per side.
5. Top with okonomiyaki sauce, mayonnaise and green onion and slice.

Kolokythokeftedes (Zucchini and Feta Balls)

You think the name sounds so difficult? Well, not this recipe. This easy to make Greek dish is perfect to serve as an appetizer or as a snack.




Makes 12 zucchini balls

Ingredients:
2 cups zucchini (grated and squeezed)
1/4 cup of feta (crumbled)
1 splash ouzo
1 clove garlic (chopped)
2 green onions (chopped)
1 handful herbs (such as mint, dill and parsley, chopped)
1 egg
salt and pepper to taste
flour (I used whole wheat)
breadcrumbs (I used whole wheat)
oil for frying

Directions:

1. Mix the zucchini, feta, ouzo, garlic, green onion, herbs and egg and season with salt and pepper.
2. Mix in equal parts flour and breadcrumbs until you can work with the mixture to form balls.
3. Form the mixture into balls and dust in flour.
4. Fry in oil until golden brown and set aside to cool.

Quiche Lorraine: A Classic Dish of French Cuisine


The weekend is almost here and what a better way to start it off than baking a classic french cuisine. Take a break from your Saturday morning routine and try this recipe. I swear, it's to die for.



Ingredients (serves 6)

  • 2 sheets ready rolled shortcrust pastry
  • 1 tablespoon olive oil
  • 1 brown onion, finely chopped
  • 4 rashers bacon, rind removed, finely chopped
  • 1 cup grated tasty cheese
  • 3 eggs
  • 1 teaspoon plain flour
  • 300ml cream
  • 1/2 cup milk

 

Method

  1. Preheat oven to 200°C. Lightly grease a fluted 3cm deep, 23cm (base), loose-base flan pan.
  2. Line base and sides of flan with pastry. Trim excess. Line pastry with baking paper. Half-fill with dried beans or rice. Bake for 10 minutes. Remove paper and beans. Bake a further 10 minutes or until golden.
  3. Heat oil in a frying pan over medium-high heat. Add onion and bacon. Cook for 3 minutes. Drain on paper towels. Cool. Sprinkle over pastry. Top with cheese.
  4. Reduce oven temperature to 180°C. Whisk remaining ingredients and salt and pepper in a jug. Pour over bacon. Place onto tray. Bake for 30 to 35 minutes or until set. Stand for 5 minutes. Serve.

The Jewels of New York Make Breakfast For Your Mom


Baked to a sugary crisp on one side and custard-soaked on the other, crème brulee French toast needs only a little prep work the night before and a few locally procured ingredients. dailycandy




Crème Brulee French Toast

Serves four

Ingredients

1 c. dark brown sugar
2 tbsp. corn syrup
1stick unsalted butter
1 loaf brioche bread (from Balthazar Bakery, if possible), cut into 1½-inch slices
5 large organic eggs
1 c. whole milk
½ c. heavy cream
1 tsp. vanilla extract
Pinch of salt
1 tbsp. Grand Marnier

Powdered sugar and sliced strawberries for garnish

1. In a medium saucepan, stir together the brown sugar, corn syrup, and butter until melted and smooth.

2. Pour the mixture into a lightly buttered 13-by-9-inch baking pan; top with bread in a single layer and set aside.

3. In a mixing bowl, whisk together the eggs, milk, cream, vanilla, salt, and Grand Marnier.

4. Pour mixture over bread and wrap tightly with plastic wrap. Let chill in the fridge for eight hours or overnight. When ready to serve, let sit at room temperature for half an hour before baking.

5. Preheat oven to 350º. Bake for 35 minutes, until bread is golden and puffed. Sprinkle with powdered sugar and decorate with sliced strawberries.
